Celiac disease is an autoimmune disorder where the immune system attacks the villi of the small intestine, causing damage to the intestinal linings and affecting nutrient absorption. The internal destruction is believed to be an immune response to ingestion of gluten-containing foods such as cereal grains including wheat, oat, barley and rye.
