Overnight Pumpkin Chia Pudding {Gluten-Free, Dairy-Free, Vegan, Paleo, AIP}

Incorporating pumpkin on a regular basis is such a smart habit! It's PACKED with vitamin A (double the daily recommendation), which is important for supporting your vision, especially in dim light. The beta-carotene in pumpkin is a powerful antioxidant, necessary for protecting the body against all kinds of problems.

Adding pumpkin to your diet can be as easy as snacking on pumpkin seeds, dipping an apple in pumpkin puree, or adding pumpkin to your morning smoothie. I love this pumpkin pie smoothie.

I especially love this pudding as a healthy, delicious breakfast option for myself and my kids. It's gluten-free, dairy-free, vegan and Paleo.

Serves 2

I N G R E D I E N T S

½ cup canned full-fat coconut milk

½ cup water

½ cup canned pumpkin puree

1 teaspoon ground cinnamon

½ teaspoon ground ginger

¼ teaspoon ground nutmeg

¼ cup chia seeds

honey or maple syrup, to taste

D I R E C T I O N S

1. In a medium bowl, whisk together the milk, water, pumpkin puree, cinnamon, ginger, nutmeg, and chia seeds. Pour the pudding into a glass container or jar, cover and refrigerate overnight.

2. To serve, stir the pudding well then sweeten to taste with honey or maple syrup.

Spoon into 2 small serving dishes and Enjoy!
