Many think that vitamin deficiencies are a thing of the past. Think scurvy from lack of Vitamin C. At one time a killer, but now only a note in history books. However, with the prevalence of over-processed, nutrient-poor foods, vitamin deficiencies can still cause major health issues.

For instance, enough Vitamin K is necessary for normal blood clotting, and found in green leafy vegetables, meat and dairy.

Vitamin B12 helps keep the body's nerve and blood cells healthy and fully functioning, and helps make DNA. B12 deficiencies are indicated in those megaloblastic anemia (abnormally large red blood cells), nerve problems, and diseases such as hypocobalaminemia. Vitamin B12 is found naturally in a variety of animal products (vegan and vegetarians, make sure you're getting enough).

Vitamin D and Vitamin A: While rickets are rarely seen in developed countries, it is caused by lack of Vitamin D or of calcium (and remember, calcium needs Vitamin D for proper absorption). Vitamin A is a fat-soluble vitamin that is important for normal vision, immune system health and reproduction. Insufficient Vitamin A levels can lead to 'xerophthalmia', or night blindness.
