Live Superfoods Raw Organic Tahini
Our raw, organic Tahini is stone ground in small batches from the manufacturer, and then sent directly to Live Superfoods. The result is an amazingly creamy, ultra-smooth Tahini; at the peak of freshness when it is shipped to you.
Before this stone-grinding process begins, hulled sesame seeds are dried at low temperatures, below 118° F, to preserve the lignans, enzymes, and nutrients found naturally in the seeds.
Live Superfoods Raw Organic Tahini adds nothing more to this rich seed butter; you will never find added salt, preservatives, or oil.
Try Live Superfoods Raw Organic Tahini in traditional preparations like hummus, or baba ghanoush. It makes an excellent substitute for nut butters for those with allergies. Tahini can be a divine dressing when combined with lemon and garlic, and thinned with water; or added to sesame oil and white wine vinegar. Tahini can become the star ingredient in sesame cookies, and is delightful when stirred into cooled udon noodles.
As with any natural seed or nut butter, oil separation occurs. Upon opening, stir well to incorporate oil (this is an excellent time to add a bit of Himalayan pink salt if you prefer a salted seed butter), then refrigerate after opening.

Sesame's Health Benefits
For thousands of years, sesame seeds have been a source of food and oil. Sesame has one of the highest oil content of any seed, some varietals exceeding 50 percent oil content compared to soybean's 20 percent. Sesame oil is one of the most stable vegetable oils, with long shelf life, because of the high level of natural antioxidants (sesamin, sesamolin, and sesamol). Oil from the seed is used in cooking, as salad oils and margarine, and contains about 47 percent oleic and 39 percent linoleic acid. Sesame seed oil, like sunflower seed oil, is rich in Omega 6 fatty acids, but lacks Omega 3 fatty acids.
Sesame seed is also rich in protein, at 25 percent by weight. The flour that remains after oil extraction is between 35 to 50 percent protein, has good effective carbohydrates, and contains water-soluble antioxidants (sesaminol glucosides) that provide added shelf-life to many products.
Sesame seeds are the only known source for the cholesterol-lowering, liver-protecting lignans known as sesamin and sesamolin.
The relative ratio of protein and oil, as well as essential amino acids and essential fatty acids varies with sesame cultivar as well as growing conditions.
