Green Superfood Cacao Energy Balls {Raw, Gluten-Free, Vegan}

Chlorella, barley and spirulina put the green in these energy balls! When combined with cacao and coconut, the flavor really pops. These make a quick and easy raw, superfood energy ball – great to grab and go! They’re the perfect treat to take along your next outdoor adventure or road trip, make a convenient after school or work snack, and easily pack into your daily lunch. Kids will love them!

p.s. do not serve food with honey to kiddos less than one year old.

Yield: 14-16 energy balls

I N G R E D I E N T S

2 cups sunflower seeds, dry

1½ cup Raisins or Deglet Noor Dates

½ cup Raw Organic Coconut flakes, dry

½ cup Raw Organic Cacao Powder

¼ cup liquid sweetener, such as honey or maple syrup

2 tablespoons Water

1 teaspoon cinnamon

1 teaspoon Barley Powder

1 teaspoon Spirulina Powder

1 teaspoon Chlorella Powder

1 teaspoon salt

Cacao Powder Dusting

2 tablespoons Raw Organic Cacao Powder

D I R E C T I O N S

1. Add the first three ingredients (sunflower seeds, raisins, and coconut flakes) to a blender or food processor. Pulse until the ingredients are chopped up. If needed, stop periodically to loosen the mixture with a rubber spatula. Do not over-blend. You still want the mixture to contain some whole pieces.

2. Pour the crumbly mixture into a large bowl and mix in remaining ingredients.

3. Stir the mixture until it's a doughy consistency. Take a tablespoon of dough and roll into 1-inch balls. Add a small amount of water as needed. 

4. Dust the balls in the cacao powder. They can be stored in an airtight container in the refrigerator up to 2 weeks, or stored in the freezer for up to one month.
